Light and healthy Mediterranean watermelon salad great choice for summer

This salad brings together a tasty selection of healthy, flavourful ingredients from the Mediterranean along with watermelon. The combination results in a light, refreshing salad that can be served as a snack or side dish with grilled chicken, meat or fish.

Watermelon Salad

1.5 l (6 cups) mixed salad greens

750 ml (3 cups) cubed watermelon

125 ml (1/2 cup) sliced onion

75 ml (1/3 cup) crumbled feta cheese

45 ml (3 tbsp) extra-virgin olive oil

30 ml (2 tbsp) balsamic vinegar

Cracked black pepper, to taste

In a large bowl, place salad greens, watermelon, onion and feta cheese and mix to combine. Refrigerate. Just before serving, toss salad with oil and balsamic vinegar and garnish with pepper.

Makes 6 servings.

Nutrition information per serving: 120 calories; 9 g fat (2 g saturated fat); 7 mg cholesterol; 10 g carbohydrate, 3 g protein; 1 g fibre; 125 mg sodium.
