Preparation Time: 15 minutes
Baking Time: 15 minutes
425 ml (1 3/4 cups) all-purpose flour
10 ml (2 tsp) baking powder
2 ml (1/2 tsp) each salt and pepper
250 ml (1 cup) whole milk
4 slices bacon, cooked and crumbled
1 sweet red pepper, finely chopped
250 ml (1 cup) shredded cheddar cheese
125 ml (1/2 cup) minced red onion
50 ml (1/4 cup) sour cream
2 ml (1/2 tsp) hot sauce
Minced fresh parsley and chopped sweet red pepper (optional)
In a small bowl, whisk together flour, baking powder, salt and pepper. In a large bowl, whisk eggs until frothy; whisk in milk. Fold in flour mixture, stirring gently to combine. Fold in bacon, red pepper, cheese and onion.
Spoon a heaping 15 ml (1 tbsp) into well-greased mini-muffin cups. Bake in a 230 C (450 F) oven until golden and puffed, about 15 minutes. Let cool on rack.
To serve, cut each in half diagonally and arrange on lettuce-lined platter. Serve with small bowl of sweet red chili sauce for dipping.
