It’s officially summer, finally, which means it’s the perfect time of year for outdoor grilling. There’s nothing wrong with a nicely spiced steak on the grill, but a marinade really adds an extra punch of flavour to your meat, fish, poultry — even vegetables.

There is a basic formula for all good marinades: an acid, like vinegar or lemon juice, to tenderize the protein; a salt, to further the tenderization; oil, to release the flavour of the spices; seasonings like herbs and sugar, for flavour; and time, ideally overnight (most of the time). Buzzfeed recommends marinading tofu from 20 minutes to 12 hours, chicken for 30 minutes to six hours, meats from four to 12 hours, and shrimp and fish from 15 to 30 minutes.
