Heading into fall and winter (we know, where did summer go?), we can all agree butternut squash becomes an essential cooking ingredient. Whether you're making your own butternut squash soup or roasting it with a variety of veggies, this comfort veggie is tasty and easy to work with. A type of winter squash, butternut squash can be baked, roasted, fried or blended into a creamy liquid.

About 100 grams of butternut squash has about 45 calories, 212 per cent of your daily vitamin A intake and 35 per cent of your daily vitamin C (if you're eating 2,000 calories a day). On top of that, butternut squash is a good source of potassium and fibre.
