Corn is just one of those vegetables you have to eat during summer. Whether it's corn on the cob, corn salad or even corn salsa with chips, corn can be eaten as an appetizer or transformed into an entree. About 100 grams of corn has 365 calories, 31 per cent of your daily magnesium intake and 30 per cent of your daily vitamin B-6 intake.

But corn also receives plenty of smack in the food world. Many people have labelled it as unhealthy, hard to digest and a vegetable that lacks nutrition. However, health experts will point out corn does count as a serving of vegetables, it has vitamins and minerals and is not always genetically modified at the grocery store — or especially at those stands by the side of the road.
