The spring vegetable, which comes in white, green and purple, has approximately four calories per stalk and is a great source of vitamins B6, C, E, K, calcium, magnesium and zinc. Even better, the nutty-flavoured green is fibrous and contains protein and sight-saving beta-carotene, says the Asparagus Farmers of Ontario group.
