Using a small ice cream scoop, you can make up to 52 cookies with this batter. Or, if you're gluttonous like us, you can use a mega scoop and get 26 cookies — just be sure to increase the baking time to ensure those eggs are fully cooked.
This dough also holds up in the freezer for up to three months, so if you don't want too many cookies hanging around, you can always portion it out and bake a batch whenever a craving comes calling.
