It’s been 23 years since Ruth Tal blazed a trail for vegans by founding the little juice bar and café that became the hugely popular award-winning Fresh Restaurant chain and published four national best-selling vegan cookbooks, along the way.

At the age of 25, after traveling the world extensively for seven years, Ruth returned to Toronto intending to attend university. Instead, after tasting her first glass of freshly squeezed carrot juice and becoming vegan herself she used her student loan to open her first location across from the CityTV and MuchMusic headquarters.

Ruth’s mission was to challenge the stereotype that vegetarian food was bland or boring and instead establish the notion that it’s hip to be healthy. There are now three bustling vibrant Fresh restaurant locations, with the much-anticipated fourth Toronto location at Yonge & Eglinton due to open this summer. 

In 2012, Ruth opened her first international location in Moscow, Russia making Fresh a global brand. It was recently voted Best New Restaurant in Moscow. Ruth has been featured in Russian Vogue, InStyle, and GQ Magazines.

Apart from co-owning Fresh with her two partners, and co-writing the Fresh cookbooks, Ruth’s super fresh life includes blogging, traveling, and sharing her wealth of experience and knowledge to inspire others.
