I recently started my holiday baking, but on my first go, I didn't end up baking anything at all.
Instead, I took out my favourite appliance -- my food processor -- and just kept adding ingredients and adjusting the spices until my concoction had a "holiday" taste.
I ended up with what I call raw bliss bites -- no baking required!
I think that "bliss" is a very appropriate word to describe these treats, as they're chocolatey, fudgy, and full of wholesome ingredients. So wholesome, even, that not only are they considered a treat, but they're the perfect on-the-go snack -- whether you need an energy boost for a workout, or something to get you through those exhausting holiday shopping days.
Having people over? Your guests will thank you for providing a healthy treat without all the sugar and butter.
Makes: approximately 20 balls
Ingredients:
1/2 cup cashews
3/4 cup pecans
12 whole dates (1-1/2 cups)
3/4 cup dried cranberries
1/4 cup cocoa powder
1/4 cup dark chocolate chips
3 tbsp natural peanut butter
1 tsp ground cinnamon
1/8 tsp ground cloves
1/4 + 1/8 tsp ground ginger
1/4 + 1/8 tsp ground nutmeg
Directions:
-Place all ingredients into the large bowl of a food processor and blend for 10-20 seconds or until ingredients are finely minced (but not pureed - do not over-blend)
-Roll into balls with your hands and refrigerate
-Serve!
