RECIPE: Fake a Little Summer in a Bowl with Peach Faux-ghurt

I don't know about anyone else, but this past week was a tease, and the above average warm temps had me swooning for summer. I think we all deserve a flashback to the hot, hot, heat. So this is one time that I say, go; go buy out of season fruit, and whip this dish up: peach faux-ghurt.

I don't know about anyone else, but this past week was a tease, and the above average warm temps had me swooning for summer. And to me, that sweet season means peaches. Succulent, plump, and juicy peaches. Of course the best way to enjoy one of these floral rounds of flavour, is straight from hand. But the humble peach's fantastically fleshy interior does invite fusion. Last summer, while writing and reading on my balcony as the sun rose, I enjoyed many a bowl of peach-chia pudding for breakfast. And this week, dear Huff fans, I think we all deserve a flashback to the hot, hot, heat. So this is one time that I say, go; go buy out of season fruit, and whip this dish up.

**VERY ripe fruit is the secret to sweetness here, folks!

Peach (banana or berry) Faux-ghurt -- serves 1

1 small & very ripe Ontario peach, pit removed

1 T chia seeds

1 T unsweetened shredded coconut

1/2 C almond milk

Add all ingredients to a blender and puree until thick and smooth. Pour into serving bowl and allow to sit for 10-20 minutes. The faux-gurt will thicken up deliciously!
