There is one upside to the cold blistery weather during the holiday season and that's all the gently simmering food you can braise, boil, simmer and roast. There is something wonderfully comforting about taking a few seasonal ingredients, putting them into a pot in a particular order and -- shazam -- you've got a stew going!
Rushing though meals, eating junk food or snacking late at night are unfortunately too typical habits of our modern day existence. An unhealthy diet has serious repercussions, and can result in depleted energy, stress, and illness. But being busy doesn't necessarily mean having to forgo healthy eating habits; it just requires some knowledge and organization.
What I learned as I stared down at that scale was the lesson, the empowerment and the health legacy I had been searching for without even recognizing the significance as it unfolded around me. I wasn't running, stretching and eating healthy food because it would result in a particular weight, I was pushing myself to set an example.
