When organizations like Heart for Africa and Egg Farmers of Canada work with local farmers, the diets and well-being of the local population greatly improve. Establishing a local, sustainable source of eggs is the perfect way to ensure protein and vitamins are incorporated into the diet of vulnerable and disadvantaged children and adults living in developing countries.
This festive season I've been working closely with my friends at Egg Farmers of Canada to celebrate fresh, local, high-quality eggs, and the versatile role they play in holiday entertaining. Eggs are certainly an ingredient I often use in my kitchen, and dishes made with Canadian eggs take on a special meaning because of the farmers who produce them. Here are a few things I've learned.
We proudly refer to being the second largest country in the world and one of the least densely populated. What receives less attention is the fact that with every year, more and more people are forced to leave home in rural communities to look for work elsewhere.
