Accompany the crunchy cheesy cups with a glass of fresh orange juice and a bowl of berries and enjoy a bright and cheery morning.
Very young children will need some help from an adult using the stovetop and oven.
For variety, try other ingredients in these cups such as deli meat and other cheeses like cheddar or provolone instead of Asiago.
Crunchy Breakfast Cups
6 small whole-wheat or whole-grain flour tortillas
30 ml (2 tbsp) butter
4 green onions, thinly sliced
1 red pepper, diced
125 ml (1/2 cup) diced cooked ham
6 eggs, beaten
125 ml (1/2 cup) light cream cheese, cubed
50 ml (1/4 cup) shredded Asiago cheese
Chunky salsa (optional)
Heat oven to 200 C (400 F). Gently push tortillas into 6 jumbo or extra-large muffin tins or 6 250-ml (1-cup) ramekins.
In a large non-stick skillet, melt butter over medium heat and cook green onions, pepper and ham for about 3 minutes or until softened. Add eggs and, using spatula, stir into pan. Add cream cheese and continue stirring for about 3 minutes or until egg is almost set. Remove from heat and spoon mixture into tortilla cups. Sprinkle tops with Asiago cheese and bake for about 10 minutes or until tortillas are golden and cheese is bubbly.
Serve with salsa, if desired.
