Blue cheese in apple-blackberry crumble enhances dessert's flavour

Nothing says autumn like delectable fruit crumbles, when the aroma of baking apples and berries wafts through the house.

This crumble includes blue cheese, adding a savoury bite to enhance the dessert's flavour.

Apple-Blackberry Crumble

3 large cooking apples

125 ml (1/2 cup) fresh blackberries

1 pkg (175 g) blue cheese, crumbled, divided

250 ml (1 cup) superfine sugar, divided

175 ml (3/4 cup) plain flour

75 ml (3/4 cup) butter

15 to 30 ml (1 to 2 tbsp) demerara sugar (optional)

Vanilla ice cream (optional)

Heat oven to 180 C (350 F).

Peel, halve and thickly slice apples. Place in the base of an ovenproof dish with blackberries, half of the blue cheese and half of the superfine sugar.

In a separate bowl, rub butter into flour until it resembles coarse breadcrumbs; stir in remaining superfine sugar and blue cheese.

Scatter crumble mixture evenly over fruit. If desired, sprinkle with a light coating of demerara sugar.

Bake for about 25 minutes until top is golden brown and fruit begins to bubble up through the crumble.

Serve warm with vanilla ice cream, if desired.

Makes 6 servings.
