When it comes to airports and gourmet dining, Canada has only one entry representing the the cuisine of nearly 35 million people.

Earlier this week, the Daily Meal released their take on the best airport restaurants across the globe. Making the list were a number of U.S. eateries, two celebrity-backed U.K. restaurants and Vancouver's Globe@YVR.

Located inside Vancouver's International Airport, Globe@YVR pulled in at number 21 on the list of 31 eateries, beating out other airport restaurants in countries like Mexico, Argentina and Switzerland. The British Columbian restaurant, which specializes in Pacific Northwest cuisine, scored points for taking advantage of local ingredients in dishes like their seafood breakfast congee, Fraser Valley duck and fish and chips made with beer from a provincial brewery.

But that wasn't all Canada's lone contender was ranked for.

According to the Daily Meal, eateries were judged for their cuisine as well as their style, décor and services. The taste, quality and freshness of menu items played a role in the ranking of food, while room ambiance, dining service, as well as dining experience factored into how well a restaurant would rank. Restaurants were then voted on by a panel of editors and travel experts if they were offered "an unrivaled experience." Votes were then combined with category scores to calculate a restaurant's final ranking.

If the process sound exhaustive, that's because the list took half a year to make with meals at over 100 restaurants, according to Daily Meal. Rigorous standards aside, the results should make celebrity chefs like Gordon Ramsey and Jamie Oliver happy, as their restaurants both ranked among the top 20 in the list, reports Fox News.

Meanwhile, other countries like Australia were left out in the cold, with none of the restaurants at the Sydney Airport made the cut, despite featuring local celebrated chefs like Jared Ingersoll. However, reps at the Sydney Airport say its omission from the list has nothing to do with the quality of the chefs, but the quantity of the passengers who arrive at the airport.

It's a theory may hold true in Australia but doesn't stick in Canada with the omission of the nation's busiest airport on Daily Meal's list: Toronto Pearson International. However, that may all change. The Globe and Mail reports that Pearson will be getting a dozen new eateries, including a few backed by celebrity chefs like Mark McEwan come the summer of 2013.
