Greek recipes for summer entertaining: Halloumi and lemon chicken

Here are two recipes that are perfect to enjoy at summertime barbecues from the new cookbook "Three Sisters Back to the Beginning" by Betty, Eleni and Samantha Bakopoulos.


Halloumi is a tasty, salty and squeaky cheese made in Cyprus from sheep's and goat's milk. It's found in most supermarkets.

Because it can withstand high temperatures, it can be grilled or fried. The sisters say this appetizer is "deadly good" and lovely with the vinaigrette.

This recipe is suitable for those following a vegetarian or gluten-free diet.

Time to Table: 15 minutes

4 halloumi cheese slices, 5 mm (1/4 inch) thick

Olive oil, for greasing


30 ml (2 tbsp) olive oil

15 ml (1 tbsp) fresh squeezed lemon juice

15 ml (1 tbsp) minced fresh mint

1 garlic clove, minced

1 fresh red chili pepper, seeded and minced

2 kalamata olives, sliced

Heat a large skillet over high heat. Brush both sides of cheese with olive oil and place in hot skillet. Cook cheese on both sides until cheese is golden-brown, 1 to 2 minutes per side. Transfer grilled cheese to a serving platter.

Meanwhile, in a separate small bowl, whisk vinaigrette ingredients together. Drizzle over cheese. Serve warm.

Makes 4 servings.


Grilled Lemon Chicken

People like this recipe because it's easy and quick to prepare and has a fresh citrusy flavour, the sisters say. It is gluten-free

Time to Table: 30 minutes.

4 chicken breasts, boneless and skinless

30 ml (2 tbsp) olive oil

3 ml (3/4 tsp) salt

2 ml (1/2 tsp) dried oregano

Fresh cracked pepper


75 ml (1/3 cup) olive oil

50 ml (1/4 cup) fresh squeezed lemon juice

2 ml (1/2 tsp) dried oregano

2 ml (1/2 tsp) salt

Heat grill to 230 C (450 F).

Coat chicken on both sides with olive oil and season with salt, oregano and pepper.

Place chicken directly on grill and grill for 8 to 12 minutes or until chicken is firm to the touch and opaque all the way through. Ensure barbecue lid is closed as much as possible while cooking, and turn breasts over only once.

Remove chicken from grill, cover with aluminum foil and set aside to rest for 5 minutes.

Meanwhile, in a small bowl, whisk dressing ingredients together.

Use a sharp knife to cut chicken into slices. Drizzle dressing over chicken and serve immediately.

Makes 4 servings.
