Saanich baseball park concession stand introduces gourmet food

A Vancouver Island executive chef is turning little league baseball players into foodies with the opening of his new concession stand at Ambassador Park in Saanich.

Dave Roger, the Executive chef at the Marriott Victoria Inner Harbour, transformed the Lakehill Little League Park's concession stand into 'Chef Dave's Dugout' because he wanted to make the park more enticing to people and hopefully boost league enrolment.

Roger says Saanich residents have been working hard to improve the park over the past couple of years -- so he wanted to use his skills to help the park stand out.  

"I talked to my wife and said I really want to try and do something special," said Roger. 

The stand still sells the standard burgers and hot dogs, but they've added some gourmet fare to the menu.  

Menu items include:

- RBI Chicken Burger - Panko Crusted breast of chicken, spicy bacon jam, tomato and lettuce

- Wild Pitch BC Salmon Burger - Topped with red onion marmalade, lemon pepper mayonnaise, tomato and lettuce

- Authentic Pulled Pork - BBQ smoked pork, topped with housemade cilantro slaw, dill pickle

- Three Bean Vegetarian Chili 

Everything is made from scratch using only a fryer, a broiler and some electric frying pans. When running at full capacity, the stand has three cooks in the kitchen and three people dealing with customers, all of whom are volunteers.

Roger says when he took over the concession stand, he didn't expect it to become so popular, so fast.

"We've only been open about seven days now and the volume has just been huge," said Roger. "We're getting people who don't even have kids at the park." 

The season ends in the middle of June, so there are still a few more weeks left to grab a pulled pork poutine and take in a ball game.
