Considering how ubiquitous pumpkin spice has become, North Americans eat relatively little actual pumpkin. Americans eat about 50 million pumpkin pies during the holiday season, starting with Thanksgiving, and 1.5 billion pounds of pumpkins are grown in the U.S. every year, but after the holiday season many of us don’t really think about the culinary uses of that big orange squash.
