In case you weren't aware that these little French pastries were deserving of a day, you're welcome.

Macaron Day (or Jour du Macaron) was started in Paris in 1995 by Parisian pastry chef Pierre Hermé, who wanted people to enjoy the delicate pastries while raising awareness for important causes. It is now celebrated in cities all over the world.

Plenty of macaron-makers have gotten on board in the past 10 years, raising awareness for various causes across the globe. Canadian bakeries have chosen an array of charities, including Toronto's Nadège donating 50 per cent of all in-store macaron purchases to Sick Kids, Vancouver's Faubourg Paris matching the $1 price of every macaron sold and donating proceeds to the Canadian Cancer Society, and Halifax's Le French Fix supporting Family SOS.

We decided that since it's (a) Friday, (b) for a good cause and (c) macarons!, it was time to take a look at some of the inventive flavours available at delicious bakeries around the country. While not all the spots mentioned are participating in Macaron Day, why not make a little donation to a charity of your choice and buy a macaron anyway? Two good things at once.

If you've seen some other amazing flavours while travelling across Canada, let us know and we'll add them in (seriously, we could look at pictures of macarons all day).
