WHAT WE'RE COOKING THIS WEEK: Zucchini

Zucchini is a summer squash, yes a squash, that's available in grocery stores all year round. During the summer, not only can you grow your own batch, you can also do everything from cooking (pastas) to baking (brownies) to eating your zucchini raw (you can even eat the skin). One hundred grams of zucchini has about 17 calories, 29 per cent of your daily vitamin C intake (based on a 2,000 calorie diet) and 10 per cent of your daily vitamin B-6.

Zucchini is said to be a super vegetable for your overall health and skin. For example, it has lutein and zeaxanthin, two nutrients that promote healthy eyesight. And in the world of squash, the darker the squash, the more flavour it has — so go for one that's dark green.
